The Wine: Polisia Piceno Superiore 2017 Vigneti Vallorani Polisia Piceno Superiore is a red natural wine made from a blend of certified organic Sangiovese and Montepulciano grown in Marche region, Central Italy. The southern-exposed vines are 70% 55 years old, and 30% 35 years old, and grow on medium lean to argillaceous clay and marl soils. Cold maceration, spontaneous fermentation with native yeast, long maceration post-fermentation; the wine is aged for 16 months minimum in stainless-steel tank on the yeast lees, stirred weekly, and the 12 months in the bottle. Beautiful nose with red fruit with spice and round tannins, this is a medium to full body wine to be paired with red meat or earthy pasta such as Marche's typical dish Vincisgrassi. Serving temperature: 55 F.
