Whereas much of the Sauvignon Blanc in this region is picked underripe, these grapes are allowed to fully ripen on the vine giving the wine beautiful weight and texture. About the winemaker: Noëlla Morantin has been making wine in Touraine since 2001. She prefers to work under the VdF label as opposed to the AOC of Touraine, as her philosophy and farming practices are considered outside of the typical norms of the region. Noëlla purcahses grapes as well as rents and farms her own parcels from Clos Roche Blanche.
