The Wine: Chi Mera Frizzante 2019 Koi Chi Mera Frizzante is a pet nat natural wine made from 100% Pignoletto grapes grown sustainably in Emila-Romagna, Italy. Koi is made with the ancestral method and it's undisgorged – hence some visible deposit in the bottle. Please open very carefully when refrigerated. The Producer: Koi Koi is a small winery located the Province of Modena, Emilia-Romagna, with 3.5 hectares of vineyards – mostly Trebbiano Modenese, Trebbiano di Spagna, Lambrusco Salamino, and Lambrusco Grasparossa. Winemaking follows a low-intervention approach; native yeasts, no fining, no filtration, minimal added sulfites. The Region: Emilia-Romagna Emilia-Romagna is a region as famous for its wines as it is for its incredibly rich culinary tradition. Who hasn't tried products such as Parmigiano Reggiano DOP, Prosciutto Crudo di Parma DOP, Culatello di Zibello DOP?
