The Wine: Chi Mera Frizzante 2019 Koi Chi Mera Frizzante is a pet nat natural wine made from 100% Pignoletto grapes grown sustainably in Emila-Romagna, Italy. Koi is made with the ancestral method and it's undisgorged – hence some visible deposit in the bottle. Please open very carefully when refrigerated. The Producer: Koi Koi is a small winery located the Province of Modena, Emilia-Romagna, with 3.5 hectares of vineyards – mostly Trebbiano Modenese, Trebbiano di Spagna, Lambrusco Salamino, and Lambrusco Grasparossa. Winemaking follows a low-intervention approach; native yeasts, no fining, no filtration, minimal added sulfites.
